What do you do when it’s dreary and cold outside? You make something warm of course! Here is my favorite toasty Beef Stew Recipe that I make with whatever vegetables I have remaining in my fridge by the end of the week. With Snowmageden hitting us tomorrow it is a good recipe to have on hand!
- Beef Round Steak – I get the thin cut cause it’s super cheap.
- Vegetables – 2 leeks, 1/2 white onion, 3 sliced carrots, 3 sliced celery stalks, 1 can green-beans (unstrained), 1 can corn (unstrained), 6 large potatoes and 1pkg of mushrooms.
- 1/2 tbsp of Vegetable oil
- 4 cups Water
- 4 Beef Bouillion Cubes
- Season Salt
- Salt & Pepper
How to Make It:
Tenderize the beef round steak for 1min on each side. If you don’t have a tenderizer, you can use a fork. Once you are finished tenderizing the meat, rub it with a light sprinkle of season salt and pepper on both sides. Slice into cubes.
To properly slice a Leek, you cut off the end by the root and then slice off the top right above the white. Then slice the Leek down the middle.
After this you will want to rinse the Leek off because it is a root vegetable and gets dirty on the inside. Turn the leek over and make long slices down the stalk. Then, chop as you would an onion.
Warm 1/2 tbsp of Vegetable Oil on a skillet and then add the steak and leek. Chop your 1/2 White Onion and add it to the skillet. Cook until the steak is browned.
While the steak is cooking on the skillet, slice your carrots, celery and mushrooms – cube your potatoes – and add all the rest of the vegetables in a large pot. If you used canned green-beans and corn unstrained, add 4 cups of water. If you are using fresh garden green-beans and corn, add 7 cups of water to the pot. Toss in your Beef Bouillon Cubes and let cook on Med.
Once the steak is cooked through, add everything from the skillet into the large pot with the vegetables. Cover and cook on Med. Low until the carrots and potatoes are soft. Add salt and pepper to taste.
Enjoy a delicious Beef Stew! I love making this recipe at the end of the week and tossing in all the vegetables that will soon go bad. It makes a very hearty Beef Stew Meal that you can couple with Homemade Biscuits. I actually made some with a little people cutter and my kids got a kick out of it.
