I’ve recently been participating in a bread switch, specifically switching our regular bread to Arnold® Healthfull® Bread. Honestly, it wasn’t much of a jump for us because our regular bread is Brownberry Natural Wheat (Brownberry is Arnold in the Midwest). Nevertheless, Healthfull offered three new premium breads: Flax & Sunflower, Steel Cut Oats & Honey, and Nuts & Seeds and when we went to the store to begin our switch, Judah had to have the one with Honey in it and I immediately thought of Bread Pudding with homemade cream! I guess I could have thought of a healthy sandwich, but between my sweet tooth and a six year old – pudding won out.
Before we even started making the pudding, he wanted to just eat the bread. He kept repeating that it was honey bread and so I gave him a slice without anything added. He patiently sat at the table coloring whilst I made pudding , eating his lightly sweetened slice of bread happy as can be. That is a great testament to how delightful it is all on its own!
Arnold® Healthfull® Bread is 100% whole grain with no artificial coloring, preservatives or high fructose corn syrup; so this is a delightfully “healthfull” twist to bread pudding! I hope your family loves it just as much as mine. The only disappointing part of this pudding is that it disappears really fast!
Ingredients for the Pudding:
- 6 slices of Arnold® Healthfull® Steel Cut Oats & Honey Bread
- 2 Eggs
- 1/4 Cup of Butter
- 2 Cups of Milk
- 1 Tsp Ground Cinnamon
- 1 Tsp of Vanilla
- 1/2 Cup of Craisins (or Raisins if you prefer)
Preheat your oven to 350′ degrees. Cut all six slices of bread into cubes and set to the side. In a sauce pan, heat the milk and butter over med. high heat until the butter is melted. While you are heating the milk/butter, lightly beat the rest of the ingredients (eggs, cinnamon, vanilla and Craisins) in a large bowl.
After you’ve beaten the eggs, cinnamon, vanilla and Craisins together, pour in the bread cubes and mix well. By now your butter has probably melted with the milk, pour the heated milk butter into the large bowl and lightly stir as not to mush the softened bread cubes.
Once it is all mixed together, pour into a deep baking dish and bake for 40 minutes or until you can press a fork in and it comes out clean.
Now you are ready to make the cream! This is my son’s favorite part. You’ll need a mixer with a whip setting.
Ingredients for Cream:
- 1 Cup of Organic Heavy Whipping Cream
- 1/4 Cup of Sugar
- 1/2 Tsp of Vanilla
Pour all the ingredients in and let the mixer go on the whip setting until the mix is light and airy like whip cream. Now you can pour it over your hot bread pudding and fall in love!
Maybe I’m biased because I made it, but oh my goodness it was to die for! The Arnold® Healthfull® Steel Cut Oats and Honey Bread really made it magical with its airy sweetness and texture.
