Everyday of my life currently is scheduled by my Tot, who says he is my boss and that is probably true. My husband and I revolve our time around him since my Teen is on a separate schedule that includes friends and a girlfriend and not embarrassing family members. Though I try my best in our strange revolutions to have us all come together for meals, it doesn’t always work, but when it does we always try to make it easy and fun. There are only so many pockets of time where we’re not all running one way or the other and last Sunday was one of them! I got to be a part of a sponsored post for Collective Bias® for #MealsTogether and so my boys and I got together to spend time, make some great food and relax a bit.
My teen and I had come up with an easy and fun meal idea that brought together bits of our favorite things. My kids love Tyson Chicken Nuggets, my husband and I love Feta Cheese and we all love Del Monte Green Beans. At first we were thinking of making pita pockets Greek style, but my Tot would make a huge mess out of those, so it was that we landed on the idea of a Slider (or small sandwich). First we had to pick up our ingredients and I was crazy enough to go venture out to Sam’s Club on a Sunday when it was 90′ outside.
The Tyson Chicken Nuggets and Del Monte Green Beans Demonstration was really tasty though! They had little cups with samples that my Tot thought was a great treat! I was kind of hoping to see what information they had on the EPIC movie we were going to see at the premiere tomorrow, but I didn’t catch anything. The nuggets were cooking away. They only take 15 minutes on 400′, so this meal honestly takes no time at all. My Teen put together some green beans with softened radishes for me. I love the taste as I grew up with green beans and onions and radishes have a high source of Vitamin C and Potassium!
[yumprint-recipe id=’4′]I’m really excited to go see EPIC with my family tomorrow. I even invited my Mom! Having this fun dinner with the kids made me realize that I always took for-granted the times that my Mom actually could make a meal with us and we could all have it together. I thought it would be a wonderful way to treat her for teaching me that it is okay to not always have the time around the table, but make what time you do have count.
Besides, we’re all huge fantasy geeks that are really into the Good vs. Evil storylines.
Let me just praise this movie for a moment. I mean it is featuring Collin Farrell, Beyonce, Josh Hutcherson, Pitbull and Steven Tyler! That is honestly incredible and I am pretty excited to see how they all come together on the big screen! I don’t get out to the movie theater very much and so I am revved up for tomorrow. EPIC is only in theaters on 5/24/13 and I am going to be there! Are you?
