So I was asked at the last minute to help bring some dishes for Easter dinner. I immediately started to panic because I am getting better at cooking but by no means am I ready to help with an Easter feast! Thankfully I had a fabulous new cookbook from my personal favorite, Gooseberry Patch. This newest book is called Fresh from the Farmstand. This is great just in time for all the produce stands that are popping up all around.
This cookbook is a great one for me because I really need help in this department. I love browsing around Farmer’s Markets and such but there are so many things I have either never heard of or have no idea what to do with!
Back to Easter, when I got that called I immediately started flipping through it hoping to find something simple but delicious and fancy looking. Gooseberry Patch has never let me down before and once again they came through for me! Right away I found several things that would be great for Easter and some that I wanted before that! Being on short notice I chose the quickest things to make. The first dish I chose was Fresh Berry & Banana Salad. I actually made this for my family for breakfast that morning after I discovered it! It was so quick to make and super healthy!
Fresh Berry & Banana Salad-
- 2 c. strawberries hulled and cut into bite size pieces
- 1 c. blackberries
- 1 c. seedless green grapes
- 1 Banana sliced
- 2 c. strawberry or vanilla yogurt
Combine all fruit in a large bowl. Gently fold in yogurt. Serve immediately or cover and chill for 30 minutes. Serves 6-8.
We gobbled this up right away! My kids love fruit and this was just amazing!
For the dish I chose for Easter I went with Spinach, Strawberry & Walnut Salad.
- 1-1/2 lbs spinach, torn
- 3 c. strawberries, hulled and sliced
- 1 sweet onion, thinly sliced
- 1 c. chopped walnuts
Arrange spinach, strawberries, onions, and nuts in a salad bowl. Cover and refrigerate. At serving time drizzle Poppy Seed dressing over salad. Serve immediately. Serves 6.
Since I was making this for a larger gathering I increased the size of the recipe. This salad was so simple to make but it looked great! The strawberries make the salad look wonderful plus the combination of ingredients just makes it taste so yummy! My husband had his doubts but he even said it was delicious!
Of course a favorite treat for my kids is smoothies! I was happy to see a couple recipes in this book for smoothies! We are always looking for new smoothies to make. We all really enjoyed the Banana-Mango Soy Smoothie. For some reason we had never tried a smoothie with Mango before but it was so delicious! Another great smoothie was the Strawberry-Banana Smoothie. My son is on spring break this week but I think these smoothies will be great for a quick breakfast in the morning! We are usually running late so a smoothie to bring along will be great!
There are so many more recipes in this book I cannot wait to try! On my “To Try” list is; Southwestern Smothered Potato Chips, Roasted Garden Flatbreads, Orange Mint Slush, Raspberry Yogurt Muffins, Corn & Bacon Saute, and so much more! I could go on forever!
If you have never picked up a cookbook from Gooseberry Patch you should! They are great for recipes but also offer more than that. Each page has a fun tip to help with cooking, planning, decorating and more! All the recipes are so easy to follow and I like that it has the serving size on them as well. Plus the cookbooks are always very sturdy.
This cookbook is perfect for this time of year! Next time you are browsing through a produce stand and aren’t sure what something is I’m pretty sure you can find a recipe for it in Fresh from the Farmstand! With 240 recipes you can’t go wrong! All your spring/summer parties will be a hit with recipes in this cookbook.
