I am always so excited when I get the mail and there is a new Gooseberry Patch cookbook in it! Gooseberry Patch cookbooks are really neat because not only do they have amazing recipes, they always have extras in them. Every page has a little tip on it, whether it is about cooking, decorating, or just interesting info, it is fun to read them.
I glanced through and immediately found several recipes that sounded great! I read a few recipes out loud to my husband and my son shouted right away which ones I had to make! His favorite, and we’ve already made these twice, were the Hot Dog “Cupcakes”. Ok, I know this sounds kinda weird, but they were delicious! If you like corn dogs you will love these! All you do is prepare corn muffins according to the package, stir in slices of hot dog and shredded cheese, and bake for 15-20 minutes. So simple! I made mine without the shredded cheese though because my son doesn’t like cheese, and they still tasted great! So they can be made either way. These are such a quick thing, you can make these as an after school snack as well. Your kids will love them! You can top with ketchup too!
The next thing my son asked for was Chili Dog Pizzas. I made these the other night and am ready for this again! To make these you need 2 ready to bake pizza crusts,1-2 15oz can of chili with no beans, 6 to 8 hot dogs, sliced, shredded cheese. Place crusts on pizza pan, spread half the chili on each crust. Place hot dog slices on top, sprinkle cheese on top and bake according to package, until golden and cheese has melted. Delicious! These were so good, a little messy, but good! I posted a before picture, I couldn’t get an after picture to turn out good, it just looked weird.
