I am so excited to tell you about another fabulous cookbook from Gooseberry Patch! This one is my favorite so far! It is Rush-Hour Recipes. It  is full of more than 230 quick-to-fix dinner recipes including slow-cooker meals and potluck dishes! These days it seems as though everyone is so busy dinner is often forgotten and I know that is the case here unfortunately. This cookbook is wonderful because it has so many easy to make meals!

I am always so excited when I get the mail and there is a new Gooseberry Patch cookbook in it! Gooseberry Patch cookbooks are really neat because not only do they have amazing recipes, they always have extras in them. Every page has a little tip on it, whether it is about cooking, decorating, or just interesting info, it is fun to read them.

I glanced through and immediately found several recipes that sounded great! I read a few recipes out loud to my husband and my son shouted right away which ones I had to make! His favorite, and we’ve already made these twice, were the Hot Dog “Cupcakes”. Ok, I know this sounds kinda weird, but they were delicious! If you like corn dogs you will love these! All you do is prepare corn muffins according to the package, stir in slices of hot dog and shredded cheese, and bake for 15-20 minutes. So simple! I made mine without the shredded cheese though because my son doesn’t like cheese, and they still tasted great! So they can be made either way. These are such a quick thing, you can make these as an after school snack as well. Your kids will love them! You can top with ketchup too!

Hot Dog Cupcakes

The next thing my son asked for was Chili Dog Pizzas. I made these the other night and am ready for this again! To make these you need 2 ready to bake pizza crusts,1-2 15oz can of chili with no beans, 6 to 8 hot dogs, sliced, shredded cheese. Place crusts on pizza pan, spread half the chili on each crust. Place hot dog slices on top, sprinkle cheese on top and bake according to package, until golden and cheese has melted. Delicious! These were so good, a little messy, but good! I posted a before picture, I couldn’t get an after picture to turn out good, it just looked weird.

Cheeseburger Casserole
 
Rush-Hour Recipes has lots of great meals. I’m already planning the rest of my meals for the week! The next thing I’m cooking is the Cheeseburger Casserole. It has ground beef, cream of mushroom soup, cheddar cheese soup, onion soup mix, and frozen potato puffs. Yum Yum! Others that sound good;  Bacon and Cheddar Chicken,  Creamed Chicken over Cornbread, Lemonade Chicken, Sausage & Rice Casserole, and Old-Fashioned Butterscotch Bars for dessert!
 
You really can’t go wrong with Rush-Hour Recipes! The meals are so quick and easy to make and taste delicious! This book is a must for anyone who likes to cook, but also great for the inexperienced cooks. The recipes are so easy to follow anyone can do it!
